Offered in both vegetarian and non-vegetarian expressions, the 12-course tasting sets spice, smoke, citrus and earth in conversation – not collision. A seasonal progression that moves with balance and intent: vegetable-forward interludes alongside seafood and slow-craft meats; bright acidity meeting layered spice; fire and smoke grounded by warmth and comfort. Our chefs have thoughtfully curated multiple ways to experience Pendulo, each offering a distinct lens into our kitchen and philosophy. Every menu explores the shared history of Indian and Mexican cuisines – from grain and chili to fire, fermentation, and spice – while highlighting ingredients, techniques, and flavors rooted in specific regions and landscapes. These journeys are designed around different expressions of the Pendulo menu – from our complete tasting experience to focused and pairing-led formats – allowing guests to choose the style that best suits their occasion.
The culinary bar, curated by Fay Baretto, mirrors the kitchen’s flavour arcs with agave-led signatures, clarified citrus, spice-forward infusions, and thoughtful non-alcoholic pairings. Pairings are optional; the full programme is available à la carte.
